Corse du sud


 Dear Father,

Thank you for the beautiful island of Corse (Corsica).  Today, Lord, we are interceding for the southern half of the island.  Just over 135,000 people live on this half of the island.  Lord, we pray as spring comes and new life begins to show, let it show in the hearts and lives of the people of Corse du sud.  Grow seeds of faith, hope and love in their hearts and lives.  Most of all grow the seed of your  unfailing love and draw all men to you in Corse due Sud.  We pray all these things in the name of Jesus.
 Amen.

Stage 1


Corsica 
The Tour has arrived on the island of Corsica
Lord, we pray for safety with the tour this year, but we also desire to pray for the people of Corsica.  Lord, allow your Holy Spirit freedom to arrive in the hearts of Corsica. We pray for your Word to be spoken and received today as your Good News is shared.

Corsican Beef Stew with Macaroni

My Husband bought me a new cookbook this weekend and in it I found a recipe for a Corsican dish so I thought I would share it with you.

25g/1oz dried porcini mushrooms
6 garlic cloves900g/2lb stewing beef, cut into 5 cm/ 2 in cubes115 g/4 oz lardons, or thick streaky bacon cut in to strips
45ml/ 3 tbsp olive oil2 onions sliced
300 ml/1/2 pint cups of dry white wine
30ml/2 tbsp passata , thick pureed tomatoes, or Sun-dried tomato paste
pinch of ground Cinnamon
sprig of rosemary
1 bay leaf
225 g/ 8oz 2 cups large macaroni
50 g/20z 2/3 cups freshly grated Parmesan Cheese
Salt and freshly ground black pepper

1. Soak mushrooms in warm water for 30 minutes. Drain, set the mushrooms aside and reserve the liquid. Cut three of the garlic cloves into thin strips and insert into the pieces of the beef by making little slits with a sharp knife. Push the lardons or pieces of bacon into the beef with the garlic. Season the meat with salt and pepper.
2. Heat the oil in a heavy based pan and add half the beef and brown well on all sides. Repeat with the remaining beef. Transfer to a plate. Add the sliced onions to the pan and cook until lightly browned. Crush the remaining garlic and add to the onions with the meat.
3. Stir in the white wine, passata, mushrooms, cinnamon, rosemary and bay leaf and season with salt and pepper. Cook gently for 30 minutes stirring often. Strain the mushroom liquid and add to the stew with enough water to cover. Bring to boil, cover and simmer the stew very gently for about 3 hours or until the meat is very tender.
4. Cook the macaroni in a large pan of boiling salted water for 10 minutes, or until al dente. Lift the pieces of meat out of the gravy and transfer to a warmed serving platter Drain the pasta and layer in a serving bowl with the gravy and cheese. Serve with the meat.

The Island of Corsica


Corsica

Many years ago God provides us the privilege of living on the Island of La Maddalena which sits south of Corsica and north of Sardinia. Island life was wonderful. From our house we had a view of the Mediterranean sea. God and I had many conversations looking out over those waters and islands. On the way to work the mountains of Corsica would be visibly frosted with snow. God has blessed me by letting me see many of His works of art and Corsica is one of them. We only spent one day in Bonifacio, but it will always be a sweet memory.

Corsica is divided into two departments 2a Corse du Sud and 2b Haute Corse. After leaving department 31 filled with over a million people, Corsica will fill very empty because it has less then 300,000 living on the whole island. Corsica is a wonderful mixture of the people who have come to conquer these mountains in the sea. Even though French is the official language you are able to still here the people's tongue which sounds more like their neighbors from the south. The food comes from what is local and the visitors come for the sun and water. Overall I would love to visit the island many more times.

I pray that they will hear your good news and believe on your name. Send your message to these places so that the people can hear your gospel and believe in you. Strengthen the believers who live here and I pray that they will remain faithful to you each and every day.
